Marco Olivares

Marco Olivares is a distinguished Hispanic chef, originally from El Paso, Texas. His culinary journey began at Riverside High School, where he discovered his passion for cooking through the Culinary Vocational Program. Marco further refined his craft at The Culinary Institute of America in Hyde Park, New York, where he graduated with honors in 2014.

Throughout his career, Marco has competed in some of the world’s most prestigious culinary competitions, earning three gold and two silver medals at the Culinary Olympics in Germany. His experience in New York City includes working in several top-tier restaurants, culminating in his role as Executive Chef at The Crow’s Nest in The Hamptons, where he had the privilege of cooking for dignitaries and celebrities.

Driven by a desire to bring his expertise back to his roots, Marco returned to El Paso, where he co-founded Lola Rose and Madre Rosa. These establishments showcase his commitment to using simplistic, seasonal ingredients, infused with the rich flavors of the borderland. Marco’s cuisine is a testament to his dedication to excellence and his deep connection to his heritage.
