Chef Michael Graham is the Chef de Cuisine of Hotel Paso Del Norte’s signature fine dining restaurant, 1700° Steakhouse. Overseeing all aspects of the renowned steakhouse, Chef Graham specializes in Texas Wagyu and fresh seafood, utilizing his expertise in in-house butchering to provide the freshest cuts for the restaurant's dishes.
In his role at 1700°, Chef Graham manages day-to-day operations, crafts the menu, trains staff, and upholds service standards, ensuring that every dish – especially the restaurant’s signature steaks – is cooked to perfection. He is passionate about food science, fermentation, and molecular gastronomy.
Chef Graham's culinary journey has taken him from restaurants in California to Alabama before landing in El Paso, where he has played a pivotal role in shaping the city's culinary landscape. Through his contributions at 1700°, he is proud to have helped transform El Paso's culinary scene, setting a new standard for fine dining. His vision has been to bring the culinary experiences typically found in larger cities to El Paso and to cultivate a top-notch training ground for aspiring culinary students.
